At first glance, the priest appears to be a rather useless card because your opponent should be able to immediately get rid of the card that was seen by your priest. But if you look further, you'll realize that there are some cards that are difficult to get rid from the hand and they are Baron, King and Princess.

When someone wins the Baron by knocking out the Prince, this means that they have a card of value 6 and above. If you have the opportunity to use the Guard on that player, it is actually better to guard for the Countess. That is because the Countess is the easiest card to get rid of out of the pool of (6, 7, 8). If that player don't have the Countess, then you have successfully trapped them with either the King or the Princess, both of which are difficult to get rid of from the hand.
